Many parameters influence the aromatic qualities of a wine: botanical species, geographical origin, wood texture, stave-wood aging, the technique used by the cooper artisan

Among these techniques, one is essential : Heating (Toasting).
In collaboration with the vintner, the expertise of our cooper in this decisive step will lead to the production of still greater wines.


Since aromatic strength evolves with the increase of toasting intensity, appropriate firing is essential and must take into account the wood origin as well as the nature of the wine to vinify .

According to toasting time and intensity, Billon fires barrels to four different levels: light, medium, medium plus, heavy.

Billon Cooperage can offer specific heating.
